Then you’re going to LOVE this decadent raw version of it – trust me. It’s quite rich, so even just a mouthful is a delightful way to say byeeee to a sugar craving.

Cherries not in season? Give it a whirl with raspberries, strawberries, blueberries or even blackberries.

The ingredients
  • Base
  • 200g fresh cherries, pitted
  • 125g desiccated unsweetened coconut
  • 2 tbsp raw cacao powder
  • 2 scoops stevia
  • 120ml raw chocolate*

  • Topping
  • 100g fresh cherries, pitted
  • 20g unsweetened coconut flakes
  • 80ml raw chocolate*

  • Raw chocolate* (makes extra)
  • 150g raw cacao butter
  • 50g raw cacao powder
  • 3 tbsp rice malt syrup
  • ½ vanilla bean
  • 2 scoops stevia
How to make it
  1. In a food processor, blend together the 200g fresh cherries, desiccated coconut, raw cacao powder and raw chocolate.
  2. Press firmly into a baking paper lined loaf dish. Set aside in the freezer to firm up (about 20 mins).
  3. Once firm, top with more fresh cherries, drizzle raw chocolate over top and coconut flakes. Then drizzle some more raw chocolate! Store in the fridge or freezer.
  4. To serve, slice into small bite sized pieces with a sharp knife (it may crumble otherwise).
